Ingredients for Asian-Style Crispy Garlic Chicken

This recipe serves 4, yielding a generous bowl of crispy chicken goodness. Here’s what you’ll need for the chicken, batter, and sauce.

For the Chicken

  • 1 ½ lbs (680g) boneless, skinless chicken thighs or breasts, cut into bite-sized pieces

  • Vegetable oil (for frying)

For the Batter

  • 1 cup (125g) cornstarch

  • ½ cup (60g) all-purpose flour

  • 1 teaspoon baking powder

  • 1 teaspoon salt

  • ½ teaspoon black pepper

  • ¾ cup (180ml) cold water

  • 1 large egg

For the Garlic Sauce

  • ¼ cup (60ml) soy sauce (low-sodium optional)

  • 2 tablespoons hoisin sauce

  • 2 tablespoons honey

  • 1 tablespoon rice vinegar

  • 4 cloves garlic, minced

  • 1 teaspoon ginger, grated

  • 1 teaspoon sesame oil

  • 1 tablespoon cornstarch (mixed with 2 tablespoons water for slurry)

  • 1 teaspoon red chili flakes (optional, for heat)

  • 1 tablespoon sesame seeds (for garnish)

  • 2 green onions, sliced (for garnish)

Equipment Needed

  • Large mixing bowl

  • Whisk

  • Deep skillet or wok

  • Slotted spoon

  • Small saucepan

  • Tongs

  • Paper towels

Step-by-Step Instructions

Follow these straightforward steps to create a crispy garlic chicken masterpiece. From prep to plate, you’ll be done in about 40 minutes!

Step 1: Prepare the Chicken

Cut the chicken into uniform bite-sized pieces for even cooking. Pat dry with paper towels to remove excess moisture—this helps achieve that perfect crispiness.

Step 2: Make the Batter

In a large bowl, whisk together cornstarch, flour, baking powder, salt, and black pepper. Add the cold water and egg, stirring until a smooth batter forms. Add the chicken pieces to the batter, ensuring they’re fully coated. Let sit for 5 minutes.

Step 3: First Fry

Heat 2 inches of vegetable oil in a deep skillet or wok to 325°F (165°C). Working in batches, fry the battered chicken pieces for 3-4 minutes until lightly golden. Remove with a slotted spoon and drain on paper towels. This first fry cooks the chicken without over-browning the coating.

Step 4: Second Fry

Increase the oil temperature to 375°F (190°C). Fry the chicken again for 2-3 minutes until golden brown and crispy. Remove and drain on fresh paper towels. The double-fry method locks in the crunch!

Step 5: Prepare the Garlic Sauce

In a small saucepan, combine soy sauce, hoisin sauce, honey, rice vinegar, minced garlic, grated ginger, and sesame oil. Bring to a simmer over medium heat. Stir in the cornstarch slurry and cook for 1-2 minutes until the sauce thickens. Add red chili flakes if you love a spicy kick.

Step 6: Coat and Serve

Toss the crispy chicken pieces in the warm garlic sauce until evenly coated. Sprinkle with sesame seeds and sliced green onions for a finishing touch. Serve immediately with steamed rice, fried rice, or a side of stir-fried veggies.

Tips for the Best Crispy Garlic Chicken

  • Double Fry for Crunch: The two-step frying process is key to that irresistible crispiness—don’t skip it!

  • Control the Heat: Adjust chili flakes or omit them for a milder version suitable for all palates.

  • Keep it Crispy: Serve right away to maintain the texture; the sauce will soften the coating over time.

  • Make Ahead: Prepare the chicken and sauce separately, then combine just before serving.

  • Oil Temperature: Use a thermometer to monitor oil temperature for perfect frying—too low, and the chicken gets greasy; too high, and it burns.

Pairing Suggestions

Elevate your meal with these complementary sides:

  • Rice: Steamed jasmine or sticky rice soaks up the delicious sauce.

  • Veggies: Stir-fried broccoli, snap peas, or bok choy add a healthy crunch.

  • Noodles: Toss with lo mein or chow mein for a hearty twist.

  • Drink Pairing: Pair with iced green tea or a light beer to balance the flavors.

Nutritional Benefits

This dish is a tasty treat with some nutritional perks! Chicken provides lean protein, while garlic and ginger offer anti-inflammatory properties. Each serving (about 6 oz chicken with sauce) contains approximately:

  • Calories: 450-500 kcal

  • Protein: 30g

  • Fat: 20g

  • Carbohydrates: 40g

For a lighter option, reduce the oil used for frying or serve with extra veggies.

Variations to Try

  • Sweet Twist: Add an extra tablespoon of honey or brown sugar for a sweeter sauce.

  • Spicy Kick: Incorporate sriracha or fresh chili peppers into the sauce.

  • Nutty Flavor: Sprinkle with crushed peanuts or cashews alongside sesame seeds.

  • Vegetarian Version: Substitute chicken with tofu or cauliflower florets, adjusting frying time.

FAQs

Can I bake the chicken instead of frying?Yes! Preheat your oven to 400°F (200°C), place battered chicken on a parchment-lined baking sheet, and bake for 20-25 minutes, flipping halfway, until crispy.

How do I store leftovers?Store cooled chicken and sauce separately in airtight containers in the fridge for up to 3 days. Reheat the chicken in an oven or air fryer to maintain crispiness, and warm the sauce on the stovetop.

Can I use chicken breasts instead of thighs?Yes, but thighs are juicier. If using breasts, avoid overcooking to prevent dryness.

Is this dish very spicy? The heat is mild but adjustable—omit chili flakes for a non-spicy version.

Can I make the sauce ahead of time?Yes, prepare the sauce up to 2 days in advance and reheat with a splash of water if it thickens.

Episode of the Week

That Love Podcast presents: American Bollywood — Episode 2

Format/Genre: A cinematic coming-of-age audio rom-com and romantic audio drama combining first love, friendship, Bollywood dance, family complications and one wonderfully impossible plan.

Logline: Determined to learn the language of dance before Miles Pires Shah disappears from her life, Izzy Lopez finally finds a teacher willing to believe in her — only to discover that chasing the boy of her dreams comes with a £2,000 price tag and the frightening possibility that Miles may finally be starting to notice her.

Izzy Lopez returns to Gloria Okafor after being rejected by four different dance teachers, but this time she finally has an answer to Gloria’s question. She wants to dance because Miles Pires Shah finds something in movement that Izzy has never been able to express with words, and if she can learn that language, perhaps she can finally reach him. Gloria agrees to teach her, beginning what promises to be one of the most difficult dance-training relationships either of them has ever experienced.

The first lesson confirms something everybody already suspected: Izzy is spectacularly terrible. Gloria, however, believes that technique can be built around whatever spark exists inside her, and promises that if there is something there, she will find it and turn Izzy into someone capable of making Miles stop and look.

Then comes the catch. Gloria’s training requires a £2,000 deposit, leaving Izzy with an impossible financial problem, no real savings and the sudden realisation that learning to dance may require far more than determination. But just as the dream begins to feel further away, a quiet encounter at a bus stop finally gives Izzy something she has wanted for years: a genuine conversation with Miles.

For a few brief moments, Miles laughs with her, remembers her name and allows Izzy to see beneath the carefully controlled version of himself he shows everyone else. Izzy leaves believing she still has a long way to go before Miles truly sees her — unaware that a forgotten red scarf may already have given him a reason to look twice.

American Bollywood Episode 2 deepens this romantic podcast into a story about perseverance, vulnerability and those tiny moments when two people who have always existed in the same world finally begin moving toward each other.
