Ready to transform your dinner routine with this irresistible recipe? Let’s dive in!

Why You’ll Obsess Over This Bang Bang Chicken

Bang Bang Chicken is a popular dish inspired by the creamy, spicy sauce found in many Asian cuisines, and this Crock Pot version takes it to the next level. The slow cooker does all the work, infusing the chicken with rich flavors while keeping it juicy and tender. Topped with colorful bell peppers, red onions, cilantro, and a sprinkle of sesame seeds, it’s as visually stunning as it is delicious. Here’s why this recipe will become your new favorite:

  • Set It and Forget It: Just toss the ingredients in the Crock Pot and let it cook all day.

  • Customizable Heat: Adjust the spice level to suit your taste buds.

  • Crowd-Pleaser: Perfect for family dinners, potlucks, or meal prep.

  • Healthy Twist: Packed with protein and veggies, it’s a balanced meal with a decadent feel.

Let’s explore the ingredients and steps to whip up this flavor-packed dish at home.

Ingredients for Crock Pot Bang Bang Chicken

For the Chicken:

  • 2 lbs boneless, skinless chicken thighs (or breasts for a leaner option)

  • 1 cup chicken broth

  • ½ cup sweet chili sauce

  • ¼ cup mayonnaise

  • ¼ cup Thai sweet chili sauce

  • 2 tbsp sriracha (adjust for spice preference)

  • 2 tbsp soy sauce (low-sodium if preferred)

  • 1 tbsp honey

  • 1 tsp garlic powder

  • 1 tsp ground ginger

  • Salt and black pepper (to taste)

For the Garnish and Serving:

  • 2 cups cooked white rice (or brown rice for a healthier option)

  • 1 red bell pepper, thinly sliced

  • 1 yellow bell pepper, thinly sliced

  • ½ red onion, thinly sliced

  • ¼ cup fresh cilantro, chopped

  • 2 tbsp green onions, sliced

  • 1 tbsp sesame seeds

  • Lime wedges (for serving)

Step-by-Step Instructions

Step 1: Prepare the Crock Pot

  1. Add the Base: Pour the chicken broth into the bottom of the Crock Pot to keep the chicken moist during cooking.

  2. Place the Chicken: Arrange the chicken thighs in an even layer over the broth.

Step 2: Make the Bang Bang Sauce

  1. Mix the Sauce: In a medium bowl, whisk together the sweet chili sauce, mayonnaise, Thai sweet chili sauce, sriracha, soy sauce, honey, garlic powder, ground ginger, salt, and black pepper until smooth.

  2. Coat the Chicken: Pour the sauce over the chicken, ensuring all pieces are well-covered. Use a spoon to spread it evenly.

Step 3: Slow Cook the Chicken

  1. Set the Timer: Cover and cook on low for 6-8 hours or on high for 3-4 hours, until the chicken is tender and easily shreds with a fork.

  2. Shred the Chicken: Remove the chicken from the Crock Pot and shred it using two forks. Return the shredded chicken to the sauce, stirring to coat.

Step 4: Prepare the Garnish

  1. Slice the Veggies: Thinly slice the red and yellow bell peppers and red onion.

  2. Chop the Herbs: Roughly chop the cilantro and slice the green onions.

Step 5: Assemble and Serve

  1. Plate the Dish: Spoon a generous portion of cooked rice into bowls. Top with the shredded Bang Bang chicken.

  2. Add the Garnish: Layer the sliced bell peppers, red onion, cilantro, green onions, and sesame seeds over the chicken.

  3. Finish with a Zest: Serve with lime wedges on the side for a fresh, tangy kick.

Tips for the Perfect Bang Bang Chicken

  • Spice it Up or Down: Love heat? Add extra sriracha or a pinch of red pepper flakes. Prefer mild? Reduce the sriracha to 1 tablespoon.

  • Thick Sauce: If the sauce is too thin after cooking, simmer it on the stove with a cornstarch slurry (1 tbsp cornstarch mixed with 2 tbsp water) for a few minutes.

  • Make Ahead: Prep the sauce and veggies the night before to save time in the morning.

  • Swap the Protein: Try this recipe with pork tenderloin or tofu for a different twist.

Why This Recipe Works

The magic of this Crock Pot Bang Bang Chicken lies in its slow-cooked tenderness and the creamy-spicy sauce that coats every bite. The combination of sweet chili, sriracha, and honey creates a perfect balance of heat and sweetness, while the fresh veggies and herbs add a crunch and brightness that elevate the dish. The slow cooker ensures the chicken absorbs all the flavors, making it melt-in-your-mouth delicious without any fuss.

Serving Suggestions

  • Sides: Pair with steamed broccoli, stir-fried bok choy, or a side of edamame.

  • Drinks: A cold iced tea with lemon or a light beer complements the spicy flavors.

  • Dessert: End with mango sticky rice or a scoop of coconut ice cream for an Asian-inspired finish.

FAQs

Q: Can I use chicken breasts instead of thighs?A: Yes, chicken breasts work well, though they may dry out slightly. Check for doneness at the 5-6 hour mark on low or 2-3 hours on high.

Q: How do I store leftovers?A: Store in an airtight container in the fridge for up to 4 days. Reheat in the microwave or on the stovetop with a splash of water to loosen the sauce.

Q: Can I make this spicier?A: Absolutely! Add extra sriracha, a dash of hot sauce, or even diced jalapeños to the garnish.

Q: Is this recipe freezer-friendly?A: Yes! Freeze the cooked chicken and sauce (without rice) for up to 3 months. Thaw overnight in the fridge before reheating.

Q: Can I skip the mayo?A: Yes, substitute with Greek yogurt for a lighter, tangy alternative, though the sauce will be less creamy.
